From an early Rose pick of Syrah grapes from our own vineyard in Metcalfe, the XO Pet Nat is our youngest, brightest and most fruitful expression of our farming.

IN OUR VINEYARD….We farm these vines regeneratively, with a strong focus on improving soil health and restoring local biodiversity since we took over the site in 2020. Our site and our fruit offer wonderful natural acidity, which has only improved with the removal of systemic sprays, allowing us to ripen longer and build flavour. The vines are located in a section of the vineyard with deep, sandy granitic soils gently sloping to the south-east and bask in a long day of sun, till late afternoon shadows provide some relief from the hottest part of the day. The fruit that we pick for this wine is our first look at the years harvest and always an exciting pick. We walk the line on acid and flavour ripeness on this pick, with an eye on making a vibrant and flavourful young summer wine to introduce the vintage and pay respect to the farming.

IN THE WINERY…Hand-picked bunches are direct pressed to tank, settled and racked to tank for primary ferment. As the ferment approaches dry we chill the wine and drop out solids, before racking and allowing natural ferment to kick back in, with hand bottling at 12 g/L sugar and the final journey taking place in bottle. These bottles rest in the cellar over winter and emerge in late spring, just in time to give you a lift and keep you up there fro the long summer ahead. Made and bottled without any additions or filtration or fining.

IN THE GLASS… The colour of sunset and the taste of summer…via autumn fruits! Poached quince and nashi with blood orange. The acid is fresh and lifting, but balanced with a deeply satisfying ripeness of fruit and texture. A wonderful apero style, with plenty of cinnamon and anise and a little buzz of skin tannin. This is a wine made of and for its home, best enjoyed on the back deck at Boomtown.
