2025 MINIM 'SIMONE' - Cabernet Rose

A ROSE…. made from regeneratively farmed Cabernet grapes grown by us in our Metcalfe vineyard.

We grew some amazing grapes out at Metcalfe in 2025, deepening our commitment to regenerative viticulture, our understanding of the different blocks and the wines we want to make from each parcel. Cabernet makes an excellent Rosé and this was year to do it! This wine represents the first pick of the year and comes from deep granitic sands in the Valley Block. Picked early for bright acid, just as fruit flavor is starting to reveal itself. Hand-picked and direct pressed to stainless steel tank for natural fermentation on most solids, with a smaller portion racked off solids and fermented in seasoned puncheons. Resting over winter in tank and barrel, racked early spring with a sulphur addition prior to bottling.

IN THE GLASS…a bit of a nod to Provence this year, in style rather than varietal mix with lively fruit and acid tempered by some careful barrel work, taking Simone out of the park and onto the dinner table. Still a good time wine, but maybe it’s been to Europe this summer and has some opinion to share about high art and geopolitics. Soft red fruits and gentle xmas spice with some decent palate weight and little hummm of skin tannin to keep you thinking.

Really excited to make a wine like this off our fruit. Hope you like it!
