2025 MINIM 'PATSY' - Fiano
Patsy is made for summer. A dry, savoury and textural, white wine offering a most thirst quenching take on northern Heathcote through the lens of earlier picked Fiano. Farmed by Troy McInnes for Chalmers vineyard.
The Fiano pick for patsy is a little earlier, aiming for that sweet spot between juicy fruit flavour and jumping natural acid. Destemmed berries get a pre ferment cold soak on skins for subtle phenolic extraction for a few hours prior to being pressed and fermented in stainless steel on full solids, without temperature control. Fiano loves to get warm and sit on solids. Post ferment this wine is racked off gross lees and sits over winter in tank on fine lees to contemplate and get a bit more serious about life.. All native yeasts, no filtration or fining and a small addition of sulphur prior to bottling.
IN THE GLASS.....Patsy is savoury, lean, crisp and textural - something to share with friends on hot days and have a good time. Fresh crunchy lemon juice acidity and good time tropical fruit, subtle white pepper and texture born from extended time on lees and a short soak on skins prior to ferment. A briny quality this year…maybe even lacto-pickle. Definitely nautical! Not for inspiring endless critique and considered evaluation…just a nice summer drink when you need it most.
Serving suggestion: you and hot weather…maybe on a boat?
