The 2017 Minim Patsy is the first of its name, conceived to explore the youthful fruit character of Fiano, whilst permitting the later varietal fiano release more barrel and bottles time to fully develop prior to a 2018 release. This wine combines Chalmers grown Fiano (80%) from both there Merbein and Colbinabbin sites; the former destemmed and cold-soaked fruit pressed to tank and fermented to dry on full solids, the latter was harder pressings, fermented in one seasoned oak barrique and aged for 2 months on full solids with lees works. The balance of this wine is Vermentino from Ruperts Ridge in Southern Heathcote; hung on the vine for full colour and fruit flavour and destemmed to a stainless pot fermented on full skins for 45 days. The assemblage was racked cleanly and received a small sulphur addition prior to bottling. Honestly, this style was informed by a mind-blowingly good martini I had over summer – crisp, dry, lean and savoury with brooding licks of viscosity and phenolics. Great contrasts with exquisite balance.
