The 2017 Minim Hitch is a youthful blend of red grapes, fermented carbonically, with an abundance of primary fruit aroma and a nice hit of ripe fruit and stalk tannin. In 2016, Hitch was big and wild, whilst this iteration is a far more delicate and refined chap – of the vintage and for the season. This wine is 70% Pinot Noir (Faraday Vineyard) and 30% Grenache (Willoughby Bridge), both processed as whole bunch carbonic ferments over 3-4 weeks, before being pressed to finish primary fermentation in seasoned hogs head casks. These wines were racked when malo dry, cleanly to tank with a small sulphur addition prior to bottling. Hitch is a light, non-varietal red wine, leaning on the most aromatic reds that I work with and is made for drinking now and often.
