2017 Minim Colbinabbin Fiano - 6 Bottles


My second take on Heathcote Fiano, guiding the fruit in a few different directions in the cellar to deepen my understanding of the variety and build complexity in the expression. Balance through contrast. The grapes were grown by the Chalmers Family.

The fruit was picked earlier (physiologically) this year, but later by the calendar, looking to tighten the expression. In the cellar, the fruit was processed and fermented with a mix of whole bunch pressed barrel ferments, destemmed and cold soaked barrel ferments and carbonic maceration. These three cuves matured in old french oak barriques on a mix of gross and fine lees for 8 months, with barrel stirring over winter and malolactic fermentation finishing off in spring. The wines were racked at the start of summer, coming together to settle before bottling unfiltered and unfined, with a small sulphur addition prior to bottling in early February 2018.

I loved the 2016 release, but with what i learned from that harvest and given the freedom to age to wine patiently in barrel and bottle before release, i'm really proud to be releasing this expression.
